Every ingredient has its own density, so a cup of flour, a cup of rice, and a cup of honey all weigh different amounts even though they take up the same volume. This calculator stores the standard grams-per-cup figure for each ingredient (spooned-and-leveled for dry goods, packed for brown sugar) and scales it by however many cups or tablespoons you enter (1 cup = 16 tablespoons).

Yes for baking — nearly all recipes assume brown sugar is packed firmly into the measuring cup, which is why this calculator uses the packed gram weight (about 220g per cup).
